Nodoguro (blackthroat seaperch) is a deep-red fish caught in the Sea of Japan off Shimane and neighboring San'in prefectures, and over the past couple of decades it has gone from a regional specialty to one of Japan's most talked-about premium fish, prized for its high fat content and rich, almost buttery flesh. Because of that reputation, prices have risen substantially, and it's no longer the bargain local fish it once was.
When and How It's Served
It's typically served simply, grilled with salt to render the fat, or as sashimi when freshness allows, letting the fish's natural richness carry the dish rather than heavy sauces. Availability and quality peak in the colder months, roughly autumn through winter, when the fat content is highest, so ordering it in summer may mean a leaner version of the same fish.
