Yobuko, a fishing town on Saga's northern coast, has run an asaichi (morning market) for generations, with vendors setting up stalls along the main street to sell fish, vegetables, dried goods, and local snacks. It's a working market rather than a tourist recreation, though visitors are welcome and it does draw plenty of them now. Market hours are early, typically starting well before mid-morning, and can shrink or shift seasonally, so check current times before planning a special trip out.

Ika Odori: Squid Eaten Fresh

Yobuko's other claim to fame is squid, specifically the local slow-swimming variety caught in the surrounding waters and served as sashimi so fresh it's sometimes still moving on the plate — a dish often called ika odori (dancing squid). The texture is the point: firm, faintly sweet, almost crunchy compared to squid that's been sitting even a day. Leftover parts of the squid are commonly fried as tempura afterward, so little goes to waste.
