Rice Country With Serious Brewing
Okayama is one of Japan's notable sake-rice growing regions, particularly for Omachi, one of the oldest sake rice varieties still in commercial use and a favorite among brewers nationwide for the complex, full-bodied sake it can produce. Okayama's Bizen area, in particular, has a concentration of breweries that draw on locally grown Omachi rice, and several have built national reputations well beyond what the prefecture's size would suggest.
Tasting It Locally
Because Omachi rice produces a heavier, more structured sake than the lighter, more floral styles associated with some other prefectures, it's worth trying a few different labels to get a sense of the range, from clean junmai to more complex ginjo-grade bottles. Sake shops and izakaya in Okayama City and around Bizen typically carry local labels; ask staff to point you toward something made with Okayama-grown Omachi specifically.
