Hiroshima Bay's combination of nutrient-rich river runoff and calm, sheltered waters makes it one of the best oyster-growing environments in Japan, and the prefecture produces roughly the majority of the country's farmed oysters — commonly cited as around 60%. Farmers use a rope-suspension cultivation method rather than seabed farming, hanging oyster spat from rafts so they grow in the water column where nutrients are richest. Note that a large, still not fully explained die-off hit Hiroshima Bay farms in late 2025, killing off an estimated 80–90% of oysters in some affected areas and prompting emergency government support for growers — supply and prices may still be recovering, so this is a case where checking current availability with a restaurant or vendor before your trip genuinely matters.

How Oysters Are Served

Hiroshima oysters show up grilled (kaki no yaki), deep-fried (kaki furai), and simmered into hotpots, alongside raw preparations where sanitary certification allows it. Some regional twists even fold oysters into an okonomiyaki-style dish, distinct from the more famous cabbage-and-noodle version. Peak season runs roughly from autumn through late winter, though exact timing and availability shift year to year — and given the recent die-off, checking current conditions locally is especially worthwhile this year.
