A Quieter Sake Region
Fukui produces less sake by volume than neighboring Niigata or Ishikawa, and its breweries get correspondingly less national attention. Even so, the prefecture shares the same mountain-fed water and rice-growing base that supports quality brewing across the wider Hokuriku region, and small Fukui producers have increasingly picked up recognition in national sake competitions in recent years.
Made to Go With Crab
Given Fukui's strong association with Echizen crab, many local sake styles are brewed dry and clean rather than sweet or heavy, so as not to overpower delicate crab meat. If visiting during crab season, pairing a local bottle with a crab meal is a genuinely regional way to eat, and staff at restaurants serving crab can usually suggest a suitable local sake to go with it.
